Menu Plan Monday (Sunday)!

Here we go with another week's menu! We haven't gotten the details all worked out yet, but here's what it's shaping up like so far...

Sunday - Meatloaf,* peas & garlic mashed potatoes
Monday - quick leftovers from Sunday's dinner before set construction crew @ G's school
Tuesday - chicken fajitas
Wednesday - family night w/ G's family?
Thursday - G's doing dinner! Sloppy joes maybe?
Friday - heading up to my parents' house, so we'll have a late meal of lenten fish dinners when we get there! I am so excited!
Saturday - extended family spaghetti dinner! I'm making Paula Deen's Toffee Gooey Butter Cake for dessert! Yum!

*Mom's Tried & True Meatloaf Recipe

2lb. ground beef
1 packet Lipton Onion Soup Mix
2tsp salt
1 cup bread crumbs/cracker crumbs/oatmeal combination
2 eggs
1/2 c milk
big squirt of ketchup (1T) plus some for the topping
1 small onion, chopped

1. Heat oven to 350
2. Mix all ingredients & shape into a loaf, smear ketchup over the top
3. Bake 1.5 hr on a wire drip pan, inside a baking dish
4. Remove from oven & let stand 5-10 minutes before cutting

The meatloaf recipe sounds good. I make mine a little differently. You may want to try this topping:
equal mix of ketchup, Sweet Baby Ray's BBQ sauce, and brown sugar. Stir and put on top... yummo!
