Menu

Menu planning has been going really well & I haven't been at a loss for ideas thanks to pinterest! We've been doing well sticking to one beef meal, one chicken meal & one meat-free meal per week & then filling in the others with "whatever." Here is this week (notice the beef meal is substituted with turkey)!

Monday: Family Night
Tuesday: Crock Pot Chicken & Dumplings (except I'm making my own dumplings)
Wednesday: Turkey Meatloaf and "Texas Roadhouse" Rolls
Thursday: Pizza take-out
Friday: Ravioli Bake

Menu Plan Monday

For the past couple of weeks, I've finally gotten back into meal planning around here! It has been really nice to not be stressing about dinner time all day, until 5PM rolls around & I finally manage to scrounge something out of the freezer & pantry...and with the addition of my new, handy-dandy dry-erase menu board that I made (thank you, pinterest!), G enjoys knowing what dinners are coming up, as well!

This week's menu (that's last week's posted on the board) consists of:

Sunday - Chicken Fried Rice & Chinese Green beans (new recipe - two thumbs up!)!
Monday - Pizza Bites (another new recipe - thanks to pinterest!)
Tuesday - Chicken & Bean creamy white chili
Wednesday - Meatloaf with roasted broccoli
Thursday - leftovers
Friday - a friend's wedding
Saturday - my parents, brother & his fiance are coming to visit!! - Pork & sauerkraut in the crockpot with either zucchini fritters or broccoli ramen salad

I'm already thinking of ideas for next week, too! PS - hopefully there will be an IF related post coming shortly!

Menu Plan Monday!

I'm so excited to be back to menu planning - I don't know why, but it always seems that when my life is busier, I menu plan less...which is ridiculous since it makes my life SO much easier during the week. If I get a full-time job next year, the one thing I must be better at is meal-planning so that I can continue to make fresh meals each night (meaning cooked, not from a box/package).

Here's what this week looks like:
Sunday - Multi-grain angel hair w/ homemade meatballs, steamed snow peas
Monday - Creamy White Bean Chicken Chili (omitting the green chili peppers this first time)
Tuesday - Skillet Chili Macaroni
Wednesday - Pretzel Crusted Chicken for MIL's birthday
Thursday - leftovers?
Friday - on my own since DH will be in NYC chaperoning a trip to see Wicked (**jealous**)

More savings and a recipe!

Ok, I can take it...raise your hand if you're sick of hearing (reading?) me blog about my Rite-Aid savings and nothing else...anyone?? No? Ok, great, then I'll continue to tell you about them. I do promise to throw in a few posts about other goings-on in the upcoming weeks, though, ok? And I plan to be better about MPMs (menu-plan Mondays), too!

Today, I made a quick pit-stop at Rite-Aid to take advantage of a couple of great sales they were having. When all was said and done, I walked out of the store with $32 worth of merchandise for $8.20 - that's a 75% savings!!! I'll insert a pic later when G comes home and lets me use his camera phone or camera (the camera part of my phone went kerplooey!)
As always seems to happen, I go in to Rite-Aid, coupons in hand, in hopes of getting just a few specific things, which my store just never seems to carry (certain sizes of certain brands...Scott Extra Soft TP in the larger multi-pack sizes, for example). Today was no exception, but I made the best of it anyway. Here's the breakdown of what I got....

  • Charmin Basic 12-pack - reg. $8.49 - $1 coupon = $7.49
  • 2 - 20 pack Kotex liners - reg $1.49 each - on sale for $.99 each - $2/2 coupon = $.02 overage!
  • Excedrin 24ct. - reg. $4.99 - free product coupon = free!
  • Finish Quantum Dishwasher Tabs - reg $6.49 - clearance 50% off - $1 VideoValues coupon = $2.24
  • 2 - Kashi Heart to Heart cereals - reg $4.99 each - on sale BOGO - $1.50 printable coupon = $1.74 each!
  • I also had a $5/$20 Video Values coupon!
And I'll leave you with our dinner plans for tonight...even though G & I are now Methodist & therefore no longer need to abstain from meat on Fridays during Lent, we were both raised with meat-free Fridays, so we continue the tradition in our home as much as possible. G is ecstatic because tonight for dinner we're having Pioneer Woman's French Onion Soup! It takes a while to make (mostly in the oven) but the results are well worth it - this soup is amazing!

Muddling through Monday

Today just seemed like one of those days that I muddled through. I have been sick for over a week now. Despite going to the doctor and getting a diagnosis of "Eustachian tube dysfunction" I've gotten no relief from my Sudafed and Flonase. I woke up in the middle of the night last night hacking and coughing, only to wake G up. I took some cough medicine and went to sleep in another room, which made me purely exhausted today! And to top it all off, the doctor told me that if it continues to happen (where my ears aren't draining properly), I might have to get tubes in them (for the fourth time!)! I can't imagine doing that as an adult...but a couple days off of work wouldn't be so bad...

After work, I went to visit my friend (fellow-infertile) Kelli & help out with her twins (8wk old!). They are adorable and oh-so-sweet! It was good to get my baby fix (and no, I'm not germy and contagious...just some sort of nasally drip making me cough)!

I also called to make an appt. to have my RPL screenings done on Wednesday & I'm getting a haircut tomorrow! Yay!

Since I've got the next 2 weeks off of cheerleading, I'll most likely be trying out a few new recipes! Tonight, I typed "what can I make with 2 chicken breasts?" into google & came up with this recipe, which we both gave two thumbs up!

Dijon Chicken

3 boneless, skinless breasts (I used 2)
1/2 cup butter, melted (I used 1/2 stick and had more than enough!)
1/2 tbsp dijon mustard
1/2 tbsp worcestershire
1 clove garlic, minced
1/2 cup bread crumbs
1/8 cup parmesan cheese

Combine butter, mustard, worcestershire and garlic.
Combine bread crumbs and parmesan in a dish.
Dip chicken in butter mixture, then crumbs. Bake 375° 45 minutes. (I pounded my chicken on the thinner side & only baked for 25 minutes!)

I served the chicken with mashed potato pancakes (made with last night's mashed potatoes). I simply mixed the potatoes with an egg & dropped them by the tablespoonful into a hot skillet until they were brown and crisp on both sides! Don't make them much bigger than a tablespoon or they will fall apart as you're turning them!

I'm back

Well - I'm creeping back out into the real world. Thank you all for your kind comments and emails through this tough time. I guess you could say I'm still in recovery mode. Most of the time I'm "fine" (in a relative sense of the word) but then I hear a song on the radio (Miley Cyrus's the Climb is the WORST) and I completely lose it...baby steps, baby steps (even saying that makes me cringe...maybe I should say itty-bitty steps, itty-bitty steps).

In other news, I have an appointment set up for a phone consultation with the RE on October 1st. I am very much looking forward to this. I already have a plan of action in my head, so I'm really hoping that the doctor agrees with my line of thinking..

And because I really don't have anything else to post about (other than the impending doom that is the first day of school tomorrow), I'll do a MPM for the week...

Monday - Labor Day - burgers on the grill & homemade baked potato chips (modified this recipe)
Tuesday - Haluski (with cabbage) w/ my bloggy buddy Candi's spaetzle
Wednesday - Wing night for G, so leftovers for me
Thursday - Chicken Pot Pie using leftover chicken from the chicken noodle soup I made over the weekend
Friday - Something on the run before G's football game

Chicken Pot Pie recipe (from my friend Ruthie):
Sautee chopped onions, carrots & celery in olive oil. Sprinkle 2-3 Tbsp. flour over veggies and add 1 can of chicken broth (add peas, corn, etc if desired). Bring to a boil until it thickens. Add 2 cups of cooked cubed potatoes and bite-sized pieces of cooked chicken. Pour into pie crust & put the second crust on top (poke holes w/ a fork). Bake @ 350 until crust is golden brown and the inside bubbles up!

No news...

For once, I can actually say that this time around, no news is good news! Yesterday morning, we got the call that we had been pushed out to have a day 5 (or possibly day 6) transfer! Basically, that meant that on day 3, our embies were still dividing (some taper off by this point, or at times, there aren't enough viable ones to warrant waiting an extra two days to transfer the best ones). Being pushed out to day 5 allows the embryologists to determine which ones are really the "rock star embryos" (aka better quality), which would have a greater chance of becoming a viable pregnancy. Sooooo, in other words, we wait...they'll call me tomorrow morning sometime to let us know if we need to come in tomorrow afternoon or if we wait until Sunday.

It's been kind of annoying to wait since MONDAY, but I know that this is the good kind of waiting, so I'm trying to be patient. I went to work in my classroom a couple of times to keep myself occupied. I set up all my bulletin boards (maybe I'll post some pics soon) since it wouldn't be such a great idea to stand up on chairs and tables in the next two weeks. I've also been catching up on some housework. I vacuumed & mopped & cleaned all of the bedding...AND I got 5 lesson plans done for my grad class (moms of preschoolers/kindergartners, or teachers, leave me a comment if you want me to send you the lessons for fun game ideas!)! See? I can be productive when I want to!

I also made Candi's spaetzle to go with dinner (leftovers) tonight & it was awesome! I could have eaten the whole bowl & between the two of us, we almost did! Check it out! Yum!

Menu Plan Monday

I should have just attached this to yesterday's post since I pretty much know what we'll (we?? I mean, I'll) be making anyway, but here goes... (PS - if you're visiting here from OrgJunkie, please read my last post & pray for us!! Thank you!!). You'll see a lot of repeat recipes from last week because we just never ended up getting to a few of them (other things came up, etc) & recipes got shifted around to different days.

Wednesday - Pot Roast in the Crock pot (Just coat the meat with a packet of Lipton Onion Soup mix, pour a bit of beef broth in the bottom & throw in some chunks of celery, carrots, potatoes & onions...I'll put the leftover meat & juices in the freezer to make vegetable soup next week!)
Thursday - Going out for Japanese Hibachi for our anniversary!!!
Friday - Our Anniversary!! Hopefully going to the shore for a few days!!

MPM and IVF w/ DE update!

Hey! We're back from the whirlwind weekend of wedding duties (so much fun! pictures to come!) and 3 softball games for G yesterday! His team won the church league championship, so that was quite exciting...and the victory was especially sweet because they beat the one team in the league who consistently shows bad attitudes and tries to cheat every year (yes, this is church softball and no, I am not kidding!)

It's been a while since I've done an MPM, so I thought I would get back into it this week... I love having my menu all set out ahead of time, but we've been in and out of the house so much lately that it's been hard to get it all pulled together...so without further ado, here is this week's menu plan!
Monday - Meatloaf, baked potatoes & fresh green beans (recipe below)
I'll also be making my famous Buffalo Chicken Dip tonight for G to take as a snack at his grad class tomorrow!
Tuesday - Sticky coconut chicken & rice
Wednesday - Easy Chicken Enchiladas
Thursday - Pot Roast & veggies in the crock pot
Friday - Vegetable soup (made from leftover pot roast)
Saturday - homemade stromboli

As for our IVF cycle, I've been on Lupron (aka Loopy Lupron) for just over a week now & it truly is making me crazy! Yesterday, on the way home from my parents' house, I felt so nervous/anxious the whole time & started crying at random (and non-emotion-evoking songs) on the radio. I truly am going nuts. Thankfully, I had an ultrasound & bloodwork this morning & am now advised to knock my dosage back from 20 units to 5 & also to start my estrace! My donor (B) goes for her first ultrasound on Friday & then should be good to go to start her stims!!!!! G & I also have bloodwork on Friday (and I have an ultrasound as well) & then a meeting with the lawyer to pick up our paperwork/contract for B to sign.
Afterwards, we think we're going to treat ourselves to breakfast/brunch & a matinee of the new Harry Potter movie!!! Please continue to pray! It means the world to us!!

The Best Meatloaf You'll Ever Taste:
2 lb ground beef
1 packet Lipton onion soup mix
1 cup bread crumbs/oatmeal/cracker crumbs (any combination will work great!)
2 eggs
2 tsp. salt
1/2 c milk
1 small onion chopped fine
1 T ketchup

Combine all ingredients & shape into a loaf in a loaf pan or in a casserole dish with a drip pan. Smear a bit of extra ketchup over the top. Bake at 350 for 1.5 hr. Let rest 5-10 minutes before cutting!

Yummy Summer Salad Dressing

This super-simple salad dressing always makes me reminisce about pulling tomatoes, cucumbers and fresh lettuce right out of my grandparents' garden, taking them inside and drowning them in this delicious mixture...it's my Grammy's own "buttermilk" dressing! Today, I made it Rachael Ray style by turning it into a "bottom of the jar" recipe. This dressing goes fabulously over a tomato, cucumber & onion salad, or simply over fresh lettuce, which is how I had it today!

Grammy's Buttermilk Dressing

1. Mix equal parts of mayonnaise (Miracle Whip works beautifully, too), vinegar, milk (regular milk - combining it w/ the vinegar creates the buttermilk flavor/consistency) & sugar. My bottom-of-the-jar version ended up being about 1/4 cup of each.
2. Sprinkle in some salt & pepper & shake to combine!
3. Enjoy! That's all there is to it!

I love a bargain (meal)!

Anyone who knows me knows that I am a bargain-shopper extraordinaire. Whether it be dollar store finds, deals and steals at the grocery store, clearance racks at department stores, various miscellany at yard sales, or free samples online, I literally get a high when I get a great deal (I once got a pair of really amazing denim capris with a belt for $.97 off the clearance rack at JCPenney's! Imagine the euphoria!). So it shouldn't surprise anyone that making cheap (yet delicious and healthy) meals at home would bring me equal amounts of joy!

I bought a 6-lb roasting chicken at the grocery store the other day for $1.59 a pound (roughly $9.50 total). I didn't have any hard & fast plans for the chicken at the time, but Thursday evening, I decided to roast it. I used an adaptation of Tyler Florence's Ultimate Roast Chicken (thanks Hafsa!), except that I made an herb butter instead of using olive oil & I didn't use the bacon at all. Of course, after the fact, I found this recipe on the Delish food blog & now I want to go out to buy another just so I can stop drooling...but I digress...

After Thursday's delicious dinner, I picked all of the big pieces of meat off the bones. We still had a bunch of meaty bits sticking to the bones, though, so on Friday, I decided to boil the carcass & innards (lovely, huh?) to make my famous chicken noodle soup! And it was such a huge batch that we had it for lunch today & there will be enough for lunch tomorrow, too!

And finally, there was still about 2 cups of meat left, so today, I modified this sloppy joe recipe to make chicken bbq sandwiches and they were AMAZING! I threw all of the ingredients into the crock pot on low for about 2 hours & served them with a (thrifty) side of salad with lettuce fresh from our garden! And there's still enough left for a couple of sandwiches this week! I'll include the recipe that I used below, just so I have it in my blog recipe file for future use!

3 complete meals (plus plenty of leftovers) from one chicken? That's what I call a bargain!

Chicken BBQ Sandwiches

1.5 to 2 c shredded, cooked chicken meat
2T tomato paste
2/3 c barbecue sauce (we LOVE Sweet Baby Ray's)
1/2 c ketchup
1/4 c Worcestershire sauce
1/4 c soy sauce
black pepper

Combine all ingredients in the crockpot & cook on low for 2 hours.

Suggestions?? Anyone?

Readers/comments (not sure which) have been scarce lately...I know it's partially my fault because I haven't had too much to write about lately, and because I've been really busy the past few weeks. Now that I only have 4 days of work left, my schedule will be opening up very soon...so my question for you is...what would you like to see more of on my blog? Are there specific infertility (or non-infertility) topics that you would like to read more about? Any other suggestions on how to attract more readers to my blog?

Also, I'm looking for a really great salad recipe to take to our church picnic on Sunday...it can be a pasta salad, veggie salad, non-traditional salad...anything really! I need suggestions, people! Thanks everyone!!

Weekend-O-Fun

Our Annual (almost the) end-of-the-school year weekend of fun is upon us and I couldn't be more excited! Every year for the past few years, we pack up the car for G's parents' shore house and we host all of our friends from G's work & his coaching buddies. The weekend usually involves board games (Apples to Apples and Loaded Questions are some favorites), the beach (of course!), outdoor games (horseshoes & the PVC pipe frisbee game!), and consuming large quantities of alcohol...I will have you know that I usually stick with a wine cooler, sparkletini, or maybe an appletini...I am definitely the soberest (is that a word) one at the end of the night (I'm a total lightweight!)! However, I've been pulled through the wringer several times by the RE's office this week...I told G today that I need a massage...he thinks that I need a drink instead!

Last year's trip included our friend Mark losing his wedding band in Davy Jones's locker, with a trip to the 5 & 10 store to follow in which they came back armed with kiddie snorkels and shovels in hopes of finding it (no luck, however). This year, he will have to remember to keep his ring in the beach bag. Last year's trip also involved a game of cops & robbers (or was it cowboys & indians?) with the (intoxicated) boys around 3 in the morning. I am happy to say that my husband did not partake in the re-enactment.

I've been prepping food for the past few days, doing a few things here and there. I browned up ground beef & boiled & shredded some chicken today. Those will go into a lasagna, a Chicken Broccoli lasagna & my famous Buffalo Chicken Dip. I also made some garlic butter to go on a loaf of French bread, so we can have garlic bread with our lasagna on Saturday. Our friends are bringing baked goods & snacks, taco fixings for tomorrow's dinner, cookout goodies for Saturday's lunch & pretty much anything and everything you can imagine! Basically a weekend of indulgences, which we will pay for come Monday...I can hardly wait!

A few recipes for you...

Everyone out there has been quiet lately...if you see something you like, please comment and let me know!

Today, I wanted to share a couple of recipes with you that I made this week. The first is for a really awesome dish that I made for dinner and the second is a great dessert!

Creamy Bow Tie Pasta

The original recipe is meant to be a side dish, so I ended up doubling it and adding chicken. DH loved it so much that he cleared the bowl in no time (it really didn't make much), so next time, I will triple or quadruple it and maybe also add peas to it. So delicious!

Ingredients:

  • 1 cup uncooked bow tie pasta
  • 1-1/2 teaspoons butter
  • 2-1/4 teaspoons Crisco® Extra Virgin Olive Oil
  • 1-1/2 teaspoons all-purpose flour
  • 1/2 teaspoon minced garlic
  • Dash salt
  • Dash dried basil
  • Dash crushed red pepper flakes
  • 3 tablespoons milk
  • 2 tablespoons chicken broth
  • 1 tablespoon water
  • 2 tablespoons shredded Parmesan cheese
  • 1 tablespoon sour cream

Directions:

Cook pasta according to package directions. Meanwhile, in a small saucepan, melt butter. Stir in the oil, flour, garlic and seasonings until blended. Gradually add the milk, broth and water. Bring to a boil; cook and stir for 2 minutes or until slightly thickened.
Remove from the heat; stir in cheese and sour cream. Drain pasta; toss with sauce. Yield: 2 servings.

Lemon Bars

I'm making these for Easter to take to SIL's house, but I also made them on Tuesday night for our weekly bible study treat. I'm not much of a baker & DH has a real sweet tooth, so once he saw them, he ended up eating 2 before bible study, 2 during & 1 in his lunch the next day...I had to take the rest to work to prevent him from eating the whole pan! They aren't exactly good for you, but very yummy and just the right amount of lemon!

Ingredients:

Crust -
2 c flour
1/2 c powdered sugar
1 cup butter/margarine (softened, but not melted)

1. Sift the flour & powdered sugar together & then mix in the butter with your fingers. I tried to lighten it up A LITTLE by just using 1.5 sticks of butter instead of the full 2 sticks & I think it worked just fine...maybe a little crumbier
2. Press the mixture into the bottom of a 9x13 baking dish
3. Bake the crust in a preheated 350* oven for 20 minutes

Lemon Filling/Topping -
4 eggs
2 c granulated sugar
1 t baking powder
1/3 c lemon juice (I used fresh, which was about 1 whole lemon)
dash of salt

1. Beat all of the above ingredients together & pour over the baked crust.
2. Bake for 20-25 minutes until it is set (it will still be a bit jiggly, but you will notice that it is not watery and TOO oozy. Mine took about 23 minutes)
3. Cool the pan on a wire rack & then dust with powdered sugar
4. Cut into bars & enjoy!

Menu Plan Monday!

Here we are again with another edition of MPM! Last week's went off without a hitch. This week is a pretty busy week, however, so you will notice that I'm only in charge of 2 meals, which is super nice (even though I do love cooking).
Monday - Cheddar Garlic Chicken. I have made this before and it is very yummy!
Tuesday - Family night w/ IL's
Wednesday - DH has a class from 6-9 after school, so we will be on our own
Thursday - Beef Stroganoff - I pretty much use this recipe except that I use ground beef instead of the steak...and I have no idea what cornichons** are...anyone?
Friday - Fish dinners with my parents!

Menu Plan Monday (Sunday)

I ended up changing things up a bit last week & instead of my Chicken & Rice bake on Tuesday, we instead ate the leftover rice (that we took to the ILs house the night before) with Pioneer Woman's Ranch-Style Chicken. I had a little leftover bacon & some cheddar, so it seemed like the perfect way to use up things that I already had in the fridge. Friday's plans were kind of sketchy & I ended up doing my first attempt at French Onion Soup using Pioneer Woman's recipe. It must have been good because between Friday's dinner and today's lunch, DH & I ate the whole thing! DH even told me that soups are definitely my specialty...I've now got chicken noodle, vegetable beef & French onion under my belt!

Sunday - I didn't know what to do for dinner (we knew we wanted to do something with chicken) so I typed "crusted chicken" into google and came up with this AWESOME recipe for Parmesan Crusted Chicken. Seriously - this recipe was amazing, pretty easy & by far the best chicken-finger type recipe I've had! My only complaint is that the recipe for the breading makes SO much & unless you keep it in a separate container (from what you're actually breading the chicken in) & add more as you need it, you'll end up wasting a lot. I might halve the breading recipe next time, because it really made a ton!
Monday - Pasta with marinara, garlic bread & salad
Tuesday - Family night w/ ILs
Wednesday - Wing Wednesday for DH, so I'll be on my own
Thursday - Herbed Chicken & Gravy with rice & salad
Friday - to be determined...maybe a beef stroganoff? Sounds good to me! :)

Menu Plan Monday

I've jumped off of the menu-planning bandwagon for a couple of weeks, due to things going on here at the house (preschool progress reports, our mini vacation to Disney, etc.), but I'm happy to report that I'm jumping back on this week! It's going to kind of be a mixed up week, though, so we'll see how it goes.

Monday - Family Night #1 w/ DH's family - MIL's making Pretzel Crusted Chicken (please, do try this! It's SO good!) and I'm taking Easy Oven Rice (minus the chicken meat) as a side. Also, since we're both off of work today, I made beef fajitas for lunch, using this recipe for the seasoning. It was great!
Tuesday - Easy Chicken Bake (looks familiar, eh? Just like the rice from Monday night?? DH is addicted to this rice and could eat it every meal, so I figured it wouldn't hurt to make it again - this time for a meal)
Wednesday - Family Night #2 with DH's family
Thursday - DH has pizza party for his basketball girls, so I will probably do leftovers
Friday - maybe going out to dinner for a belated V-day meal! We don't really celebrate V-day much, but we'll take any excuse we can find to go out and enjoy a meal (that I'm not cooking!)
